This healthy twist on the classic swiss roll recipe is as easy on time as it is on the waistline! However what it isn't easy on is nutrients and health benefits! Made as a Mother's day treat, this cake has all the ingredients for women's health. The cake mixture was made with only 3 ingredients. 6 organic eggs, 2oz of Aduna super-cacao powder and 3oz of coconut sugar. The eggs are packed with nutrients including of course iron which we ladies lose on a regular basis during menstruating years. Interestinlgy, a study by Harvard University has shown that eating eggs in adolescence is linked to a reduction in breast cancer. Another study suggested that ladies eating 6 eggs per week have a 44% lower risk for breast cancer. The University of North Carolina suggested this may be due to the choline in eggs and also demonstrated this link with breast cancer reduction. Just 2 eggs for breakfast gives us half our choline for the day. Yay! The Aduna super-cacao which I used is the first cacao powder with a heart health claim which has actually been approved by the European Food Safety Authority! The high flavinol content make it perfect for maintaining our blood vessel elasticity and the high antioxidants (2.5 x the amount of regular cocoa powder and 100 x the amount in blueberries) mean that it is also perfect for skin health! The antioxidants help production of collagen and improve skin hydration thus giving us ladies a great anti-ageing food. One study showed an improvement of 21% in skin hydration after 6 weeks of use. (You can easily make this into a lovely hot drink by making a paste with 2tsp and some coconut milk or almond milk and add hot water). Also high in antioxidants and minerals like iron and zinc, the coconut sugar is known to be less than half the glycaemic index of regular sugar. It also contains inulin which acts as a prebiotic encouraging good gut bacteria to flourish and assisting with blood sugar and fat metabolism. However, it still contains a fair bit of fructose so use it with respect and it will respect you! To make life easy for us busy ladies, I've made a very simple yet delicious creamy filling for the centre with some secret ingredients. The wonderful Co-yo yoghurts are made with coconut milk which provides us with medium chain fatty acids (MCFA's). The great thing about these fatty acids is that they are small, easily digested and used by our liver for energy instead of being stored as fat in the body. Medium chian fatty acids also support the thryoid health which is great news for the many women who suffer in particular from under active thyroid, since MCFA's boost metabolism! Into the co-yo yoghurt I mixed 3 oz of Naturya blends organic choc which comes with lucuma and maca powder. The lucuma is high in minerals and is known for its anti-inflammatory and anti-ageing qualities. The maca (known as peruvian ginseng) is especially good for women's health. As an adaptogen it supports our adrenal health and stress response. It also supports our reproductive health, balances hormones, improves fertility and as studies have shown, reduces the symptoms of menopause through hormone balancing. Maca has been shown to improve sexual dysfunction, particluarly in women taking anti-depressants. It is also well known for boosting energy and the high mineral content especially calcium, magnesium and phosphorous have been shown to support bone density which is increasingly important post menopause! As I said this really is the ultimate ladies cake and couldn't be easier to throw together. What's not to like?! Recipe: Cake mix
Inside
Separate 6 eggs into white and yolks. Whizz the whites till fluffy. Mix yolks with cacao powder and sugar with electric mixer. Then gently fold the whites into the yolk mixture. Pour the batter into a baking sheet covered with greaseproof paper and bake for 20-25mins on 180c in a fan oven. Cool and gently remove paper. Filling: Mix co-yo yoghurt with naturya blends organic choc using an electric mixer and smooth over your cooled cake. Cover with raspberries. To roll the cake, lift it onto some baking parchment gently dusted with icing sugar (tiny sin!) and I always do this over a tea towel so it's easier to lift. Put a little cut about an inch into your cake at either side to make it easier for you to roll. Don't worry if it cracks slightly, just go for it!! It will have little cracks at the end which make it look all the more attractive. Bon appetit!
